We live in the form-over-function era [WayBack], so of course this setting is not reachable by URL, only reachable by using these steps:
- Click on your username
- Under your account name, you see “Preferences”. You’d think these are your **global** settings, but they’re team-specific.
- Yes you **have** to change the default behaviour for each and every team you’re part of. This is the Web-something-dot-zero era. Duh!
- Do **not** Ctrl-Click the
Preferences(that will bring you to https://gexperts.slack.com/account/settings wheregexpertsis your team name) which are different settings than you’re after. 
Click on “Preferences” which will give you a small sidebar menu (again specific to your team)
or top menu (if your display is narrow)
- There you click
Messages & Mediawhich brings you to the settings you want:

Look ma, slack without graphical emoticons!
There, I made these selections (see screenshot on the right):
- Emoji Style ->
None: plain text only - Disabled
Show JUMBOEMOJI - Disabled
Convert Emoticons
- Emoji Style ->
Probably these will change (as they already have since the above tweet) but this should give you a head-start.
